Quick and easy Granola Bars
I came across this recipe on laurenslatest.com for No-Bake Chocolate Chip Granola Bars. She adapted the recipe from Rachael Ray. I thought this must be too good to be true. Granola bars in less than 10 minutes? Well my friends, let me tell you it is true, and they are delicious!
I added flax seeds to the recipe. You could add all kinds of things to these like chopped nuts, sunflower seeds or dried fruit. They are pretty healthy, and really could not be any easier. The recipe calls for a jelly roll pan. I used a casserole dish that I lined with a silicone mat to make it easier to remove. You could also use parchment paper.

1/3 cup packed brown sugar
2 cups quick cooking oats (not rolled oats)
1 cup crispy rice cereal
1/4 cup flax seed
1/2 tsp vanilla

In a large bowl, stir oats, rice cereal, and flax seeds together. Set aside. In a small pot, melt butter honey and brown sugar over medium high heat until it comes to a bubble. Reduce heat and cook 2 minutes stirring occasionally Remove from heat, add vanilla and stir. Pour over dry ingredients and mix well to coat evenly Pour into a lightly greased small jelly roll pan (about 12x8x1) and press to evenly coat the bottom. You really, really want to press it down to pack firmly. If you do not pack it down, the bars will not stick together Sprinkle with the mini chocolate chips and press them down lightly. Cool at room temperature for two hours to set before cutting them into bars. Wrap in parchment or plastic wrap and store at room temperature.

Deal of the day - Winco pumpkins and almost free soda
I stopped by WinCo yesterday to pick up a few things. I noticed their pumpkins were only $0.17 per pound. Then I noticed the soda sitting right in front of them, and just couldn't pass this deal up.
There are hang tags on the Fanta and Barq's display right in front of the pumpkins. The soda is on sale for $1.12. The hang tags are good for $1 off when you buy a pumpkin. Score!
Here is the break down of what I paid:
29.91 pounds of pumpkins (the two pictured) at $0.17 per pound = $5.08
Two 2-liter sodas $2.24 - $2 in coupons = $0.24
Grand total $5.34

- The Fashion Bug is going out of business. I have not checked it out, but the signs say markdowns up to 60% off!
- The Albertsons at Pacific Ave (corner of Carpenter Rd) is also closing. Markdowns are 75% off! The only catch is the craziness of the store! It is worse than any Black Friday I have ever seen. After driving around for a parking spot (should have been my first clue), when I entered the store the line was crazy! The employee standing there said the wait in line was about two hours! I didn't have that amount of time to kill, and waiting in line is my biggest pet peeve! I may brave it again another day.

Deal of the day - How to save money on produce
We eat a lot of fresh produce, which can be expensive. So, when a friend recommended Bountiful Baskets, I could not wait to try it out.
Bountiful Baskets is a nationwide food Co-Op which distributes produce baskets, organic baskets, bread, and other food item. It is run by volunteers, so the costs are rock bottom. Conventional baskets are $15 and 100% certified organic baskets are $25. There is an additional $1.50 transaction charge per order (you may buy more than one basket per order). In addition, they offer a rotating selection of extras to purchase. For example, some weeks they have flats of berries or tomatoes for canning. There is a $3 charge for you first order to pay for the baskets.
There are no contracts, and you can order weekly or monthly, or when ever fits your schedule.
Orders between Monday at Noon and Tuesday at 10am on their website (Wyoming,, Utah and Montana have different times). Then you simply pick up your basket at the time given. You do not get to take the basket home with you. I have found the easiest way to transfer the produce is to bring a small laundry basket, and plastic grocery bags or produce bags for the small items.
The pickup time for the Olympia area is 7am on Saturday. I know this is way too early for some people, but as a seasoned Black Friday shopper, this is no big deal for me. You may want to switch off picking up weeks with a friend. This would also save money on the transaction fee.
They are always looking for volunteers to help sort produce. If you volunteer (times are posted on your area's schedule) you get extra produce!
We have been very happy with the selection and quality of the baskets. I have calculated that baskets are at least 50% off of what you would pay at the store. There is enough produce to last us about two weeks. I do have to buy a few bananas, carrots, and onions at the store because we eat a lot of them and they don't always come in the basket.
Bountiful Baskets is a nationwide food Co-Op which distributes produce baskets, organic baskets, bread, and other food item. It is run by volunteers, so the costs are rock bottom. Conventional baskets are $15 and 100% certified organic baskets are $25. There is an additional $1.50 transaction charge per order (you may buy more than one basket per order). In addition, they offer a rotating selection of extras to purchase. For example, some weeks they have flats of berries or tomatoes for canning. There is a $3 charge for you first order to pay for the baskets.
There are no contracts, and you can order weekly or monthly, or when ever fits your schedule.
Orders between Monday at Noon and Tuesday at 10am on their website (Wyoming,, Utah and Montana have different times). Then you simply pick up your basket at the time given. You do not get to take the basket home with you. I have found the easiest way to transfer the produce is to bring a small laundry basket, and plastic grocery bags or produce bags for the small items.
The pickup time for the Olympia area is 7am on Saturday. I know this is way too early for some people, but as a seasoned Black Friday shopper, this is no big deal for me. You may want to switch off picking up weeks with a friend. This would also save money on the transaction fee.
They are always looking for volunteers to help sort produce. If you volunteer (times are posted on your area's schedule) you get extra produce!
We have been very happy with the selection and quality of the baskets. I have calculated that baskets are at least 50% off of what you would pay at the store. There is enough produce to last us about two weeks. I do have to buy a few bananas, carrots, and onions at the store because we eat a lot of them and they don't always come in the basket.

Deal of the day - How to save money on your cell phone bill
We had Verizon for years, and I mean years. I don't even want to think about how much money we paid them. They have very good customer service, and coverage. The only complaint we had was the cost.
We are not big users of cell phones, and they don't have a plan for that. When our last contract was up, we started looking around at other options.
We decided to go with Straight Talk. It is a company owned by Tracfone, and available at Walmart and online. We have been using them for eight months now, and have no complaints. Here is what we love about them:

- Plans are very reasonable. Our plan is $30 a month ($33.50 after taxes) per phone. With that comes 1000 minutes, 1000 texts, and 30,000K for online browsing. This is more than enough for us. If you need more they have a $45 monthly plan for unlimited everything, and even a plan for international calls.
- There are no contracts. You can try them for a month. If you don't like it, you can cancel.
- We were able to keep our phone numbers.
- Activating the phones could not have been any easier.
- We have never had a problem with reception.
- The phones are reasonably priced, and Walmart runs specials in store and online for a even better deal. You can even keep your cell phone from another company to use (see website for details).
- We set up our plan to automatically renew every month, so I don't have to remember to do it.
There are many other monthly plan companies to choose from. I have heard good things about Tracfone and Boost mobile as well. HSN and QVC offer special values of the day with great deals from all of these companies. You can sign up to get a notice via email or text when they will be on air.

Going to the movie theater is a fun treat for us. Here is how I save money when we go:
- Sign up up for their weekly newsletter. They will send you concession coupons in the email. They are usually good for a discount or free soda. You can also get the coupons from Facebook after you like their page. The coupons can be printed out or sent to a smart phone.

Regal Cinemas Facebook coupon Sign up for Regal emails - Sign up for member reward programs. These programs are an easy way to earn free movie tickets, and discounts on concessions. At Regal, for example, you can use the free soda or small popcorn reward to trade up on a combo for major savings.
Sign up for Regal Crown Club - You can buy discount movie tickets at Costco. They have two packs for $15.49. This will save you about $2 per ticket over the box office price. You may need to pay an additional fee for 3D or IMAX.
- Some theaters offer refillable containers for popcorn and soda. They are slightly more expensive at the initial purchase, but provide major savings upon refilling. For example, at Cinemark their buckets for popcorn and large sodas can be refilled for only $3 each. Some of the weekly coupons can be used towards the refill as well.

Deal of the day - How to save big money at Target
I buy a lot of things from Target. You know how it is. You walk in with a list of five things, and check out with half of my cart full. A few of these purchases are spontaneous, but most are things that we need at a really good price.

- Target Debit Card - I drug my feet on this for a long time. Every time you check out they offer you a chance to save 5% by getting a debit or credit card. I did some research, and decided to get the debit card a few months back. I love it! The money comes out of your checking account just like your regular debit card. They give you 5% off on everything in the store and online, and your online order ships for free. This will come in handy at Christmas time.
- Coupons - Did you know that Target has their own coupons on their web site to print off or put on your phone? They even allow you to stack Target coupons with manufacturer coupons. They also offer coupons for their own brand. For example, Target sells Garnier Fructis Shampoo or Conditioner for $2.99. They have a Target coupon for $1 off, and there is a manufacturer coupon for an additional $1 off, bringing it to only $0.99.

You won't want to miss the clearance section in the health and beauty isles, as well as the grocery and baby isles. These are usually items that they just have too many of, or didn't sell well.
- Save your receipt - How many times have you bought something, and then seen it go on sale a couple of weeks later? Target will give you the difference back on purchases up to 90 days.

Another Bonus Deal - 1/2 price admission to Point Defiance Zoo

Everyday there is a new sample posted, as well as a calender of past ones to order.
You can also sign up to be a Reality Checker. From time to time they will ask you to test products, or ask for your hints and advice. In September's issue, I will be quoted twice. I am very excited! This is actually my third time in the magazine. I'm sure they will soon be asking me to be a regular contributor. A girl can dream, can't she?

Dear McDonald's,
I am very happy to see that you are trying to improve Happy Meals by making them healthier. Unfortunately, I think this effort has failed.
Have you tasted those "apples"? I'm not even sure how you can call them apples in the first place. They taste like Styrofoam. My children, who are not picky eaters, will not eat them. They are gross. What ever you put on them so that they don't turn brown must suck every bit of deliciousness from them.
There are so many healthy options you could have gone with. Here is a list of my suggestions:

Deal of the day - How to save on school supplies
Summer may have just begun, but I have already started shopping for back to school supplies. This is a long, and sometimes tedious process for me because I am so CHEAP! This time of year is great to stock up on gifts and stocking stuffers. We do a lot of crafting in our house so I stock pile glue sticks, crayons and other supplies for later. You can also find deals on inexpensive household items for kids going off to college.
Most stores put only a few school supplies on sale for a really good price each week, so in order to get the best deals you have to be willing to shop weekly.
I make a master list of all the supplies the kids need and keep it in my purse. That way if I come across a deal, I can see if it is something they need. Then I cross off what I buy as I go.
Another easy way to save on supplies are those empty ink cartridges. I save mine up the whole year, and turn them all in Staples. Once you have signed up for their Rewards Program, they pay you $2 per cartridge! That is free money! You have to wait a few weeks for the check to come, so round them up and drop them off this week! Please note they limit you to 10 cartridges per day for a recycle credit.
Most name brand items are worth the money. There are few generic school supplies that I buy. For example, generic crayons are not good. Also, I would never buy cheap scissors for kids. It is hard enough learning how to use them. If they don't cut well it is even more frustrating.

Iced coffee recipe
Here is a recipe for my favorite summer refresher.
Iced Coffee
1 1/2 tsp instant espresso powder ( I use Medaglia D'Oro)
1 tsp sugar
1 T chocolate syrup
1 T favorite flavor syrup (optional)
3 T HOT water
Mix all of these very well in a glass. Add several ice cubes and then milk to the top of the glass. Stir and enjoy!

Deal of the day - Cheap date night
Looking for a cheap date night this weekend? I recommend Skyline Drive-In Theater in Shelton. They are showing Rock of Ages (PG-13) and Abraham Lincoln: Vampire Hunter (R). Gates open at 8pm, and the show starts at dusk. I don't think I would be into the Vampire movie, but I've never been able to stay awake for the second movie anyway.
Tickets are $7 for adults, and you can bring in your own snacks and drinks. They also have a snack bar with great specials. This weekend you can get two cheeseburgers, an XL fry, and two small sodas for $10 bucks! You heard right, $24 for dinner and a movie with your sweetie!

Letters from Jen - Tumwater's 4th of July Parade 2012
One of my favorite lines is, "I'm going to write a letter!" It is usually due to some gripe I have. I say it when I read the paper, I say it at the mall, I say it really quite too often.
I never actually send these letter, let alone write them. But, now that I have a blog, my husband says you should write those letters and call it "Letters from Jen." So here it is, my first letter from Jen.
Dear City of Tumwater,
I really appreciate your All-American spirit. An Independence Day Parade is a great celebrate our country. Unfortunately, this year's parade was... well... kind of lame.
First off, there was not a single band. What kind of parade doesn't have a band? A lame parade! Maybe this gripe is mainly due to the fact that music is my favorite part of a parade, but I don't think I'm alone in this. A parade needs music, and not just from a sad boom box in the back of a truck.
Second, there was just one float. I don't count the trucks towing trailers with streamers as a float, and I definitely don't count the campaigns as a float which brings me to my next point.
Third, what is with all of the campaigns? How lame is that? It was like a voter's pamphlet brought to life. My daughter kept saying "Who is that? Why are they in the parade?" I did not have an answer for her, as I don't think they belonged in the parade.
Lastly, we were sitting at the end of the parade route. I was shocked, and saddened to see how the dignitary and invited guests were treated when they arrived at the end of the route. They were made, in the middle of the street mind you, to get out of the car, and remove the magnetic labels from the car which had their names on them. One particular car that worried me was the Mayor of Lacey, and his wife. They are both older, and were having troubles getting out of the car. I even heard him say to Sam Hunt, who was in the car behind him, "What is going on Sam?" They slowly walked away, and I sure hope they had someone there to take them to their car.
Hopefully you will make some changes to your line up for next years parade.

On-site staff provide structured play and craft activities, along with special guests and events.
